Farmers Market brunch.
This is almost the perfect breakfast. Iced coffee (recipe somewhere in my photos) bloody mary. (i use a mix...) Hash made from fresh potato and onion. Potato's put up (dug/dried/stored) are nothing like fresh. Broiled fresh tomato .. sigh. Is it Sunday yet?
So to make my hash.
Take fresh (okay i will get over it if you don't) potato. Cook it. (you can microwave or bake) *Note fresh potato's have more moisture so they cook super fast in microwave)
Dice onion, dice cooked potato.
Heat cast iron skillet on med
Put 2 tbsp butter in skillet.
Add onions cook till soft
Add diced potato
Cook till crispy. Don't go stirring very much. For food to get crispy you need to let it stay in contact with the hot pan.
The girls love to cook using an old cast-iron skillet!
I found this little skillet (real cast iron...you can tell from the rust!) in an antique store in Boulder!
